OBJECTIVE OF HEALTHY EATING

Baked stuffed tomatoes with tuna Cheezy

Tuna puree ingredients (takes 5 minutes)
Mix all ingredients in a food processor and set aside
Fish 2 cans (7 oz) tuna in oil
2 tablespoons anchovy paste
2 tablespoons capers
4 tablespoons freshly squeezed lemon juice
1/2 cup extra virgin olive oil
4 tablespoons mayonnaise force
Pinch of black pepper

Ingredients for the filling
2 eggs
1 cup grated tofu (except for garnish)
1 cup quinoa
2 cups mashed tuna
1 zucchini
1/2 cup olive oil divided,
1 large shallot, finely chopped
6-8 cloves of garlic, sliced
1/2 teaspoon crushed red pepper flakes
1 teaspoon cumin
1 teaspoon of turmeric
1 teaspoon cardamom
6 large tomatoes
2 large Portobello, cleaned and finely chopped mushrooms in a food processor)
Freshly ground kosher salt and pepper to taste
1 1/2 cups Panko
Yams 1/2 cup cooked mashed if necessary. Boil three sweet potatoes.
Chopped parsley for garnish

Instructions
Preheat oven to 350 degrees
- Wash tomatoes and cut 6 Top each tomato. Login below. Scoop into each tomato, but not too close to scratch the skin. You want to stay outside company to keep the filling during baking
- Cook quinoa. Beans rinse well. Bring the water to a boil and add cooking, not to burn until translucent and tender, and the germ of the grain, 12 to 15 minutes, being careful the quinoa. Drain, measure 2 cups and set aside. This is about 2 1/2 cups cooked quinoa, more than is required for the remainder of the formulation; the rest can be eaten alone or in soups or salads.
- While quinoa is cooking, coarsely grate the zucchini. Share. Grated zucchini in a kitchen towel and roll the towel and squeeze to remove as much moisture as possible Set aside.
- In a large frying pan, heat olive oil over low heat and add the chopped shallot, garlic and red pepper flakes and all the spices. Cook until shallots are soft, about 3 minutes.
- To the pan, add the mushrooms and zucchini puree and cook to soften 3 minutes, stirring frequently.
- Give Showing mixture into a large bowl and then taste the quinoa with salt and pepper. Genial.
- Now add the mashed yams and panko in a large bowl.
- Add 2 eggs and potato tuna mixture
- In most of the freshly grated cheese mixed with soy and other ingredients
- With the hands of the mixture to the eggs and tuna knead mashed fully integrate.
- Rub olive oil all over each 6 tomatoes
- Oil the baking dish
- Now, with a teaspoon carefully pack the filling into each tomato and place excavated six stuffed tomatoes in a shallow dish, deep enough to catch the juice

1 The upper reaches of tomato filling and sprinkle with freshly grated tofu on top.
Two. Bake 30 to 40 minutes.
Three. Garnish and sprinkle with chopped parsley and serve with a green vegetable such as broccoli or kale saut ed? Or just some col. (We had the house salad of cabbage and a sweet little baby pea fact)

Here's another fun time I had to experiment with ingredients such as quinoa, tuna, tofu and tantalizing spices. I think Jules spices normally do not like now, if you have other flavors balanced spicy-ness. I added mashed tuna get some depth of quinoa and mushrooms. Not even you know, eat tuna. Not the presentation is enough? Served with jasmine rice, peas and baby makes house salad of cabbage. For dessert, garnished with fresh fruit cut vanilla yogurt Activa.
